When you are low on fresh potatoes:
I use 1 or 2 potatoes and add in Potato Flakes to extend the Mashed Potatoes.
Boil the fresh potatoes with skin after they are thoroughly scrubbed.
Mash them with water and potato flakes as per directions on the box.
Add Butter and Powdered Milk or Regular Milk and Stir.
I sometimes add a spoonful of Sour Cream and a dash of salt or sea salt.
A dash of pepper can be added depending on your tastes.
Quick and Simple
My goal is to be as creative as possible when cooking and baking for my fussy kids who have disabilities. It is an adventure to invent new recipies or use simple substitutions to create delicious and healthy meals for my finicky kids. When you have special kids, your time is often scarce, so coming up with quick recipes makes life easier. Finding ways to serve foods in an appealing way gives it a gourmet twist. Buon Appetit!
